What to do with leftover rice...


You make Yellow Rice for breakfast.

Cajuns serve everything over rice. The joke is my Dad's Mom(Maw Maw) once served spaghetti and meat sauce over rice. Rumor or Fact? You can see that makes for a lot of leftover rice. Mom turns leftover rice into Yellow Rice. It is a  warm and filling breakfast. If she has leftover ham she adds it when she warms the rice. You can feed one or many, just keep to the proportions more rice than egg. You want yellow rice not eggs with rice.

Yellow Rice made with light butter and eggbeaters.

Yellow Rice
Serve 2 (or 1 hungry Cajun)

Butter (1 Tbsp)
Leftover Cooked white rice (1 cup packed)
Eggs or egg substitute, beaten (2 or 1/2 cup)
Salt, black pepper and red pepper flakes to taste
chives and smoked paprika, for garnish

Melt butter in a medium hot pan. Add rice. Season rice with salt and peppers. Stir until hot and rice has separated. Add eggs and continue to stir until eggs are cooked and rice is somewhat dry.
