Instant Pot Pork Chops and Celery Rice

I still have a lot to learn about cooking with a pressure cooker. First lesson write down what works immediately and repeat. Keep notes on what works and what does not. Recently my dear sister and I tried a childhood favorite recipe in the Instant Pot. Pork Chops and Rice is a baked one pan dish that my family has been making for years. It was my dad's favorite and he could even make it on his own. I just knew it would be great in the instant pot. And it was! We used very thin pork chops and they were fork tender in the time it took to cook the rice. I used beef bone broth I made in the Instant Pot and it was so delicious. So when I went to make it again to photograph for the blog I bought thicker boneless pork chops. I thought I would get similar results. Right? No! Not right! Just that little 1/4" in thickness made a big difference. They were tough. So I held on to this post and the photos to try one more time to make sure the thin chops would work a second time. I am glad to report the thin chops were perfect yet again. I think I might even like the Instant Pot version better. I like that the pork is moist and very tender. I will definitely keep making it in the Instant Pot in the future. I hope you will too, just make sure to buy thin cut chops. The 1/2" chops in the photos were too thick and tough. The thinner the better for this method.


Instant Pot Pork Chops and Celery Rice
Serves 4

Ingredients

Olive oil
4 or 5 boneless pork chops (thin cut)
1 cup long grain white rice, dry uncooked
4 to 6 stalks celery, sliced
1-3/4 cups beef or chicken bone broth (or stock in a box)
Kosher salt, black pepper and red pepper flakes, to taste

Directions

Place Instant Pot on Saute. Season both sided of pork chops with salt, pepper and red pepper flakes. Add a little olive oil to pot, brown pork chops on one side only. Remove pork chops and turn off heat. Add rice and broth, stir well scrapping up any brown bits off the bottom of the pot. Arrange celery on top of rice, then pork chops. Cook at high pressure for 4 minutes. Turn off and let rest 5 minutes before performing a quick release.

    1. Sorry Kyle and Michelle for not getting back to you right away. I am traveling and just checking in. I have used sliced mushrooms and it turned out great. Saute them a bit first after browning thin pork chops (chicken cutlets work too). That stops them from tasting boiled if browned first. I am sure sliced onion would work too. Maybe even peas and carrots. I hope this helps. Happy New Year!

    1. Yes, other people who have made it commented on Facebook that it turned out fine. They said they doubled the rice and broth but used the same time in the recipe. I have not doubled it myself. I usually cook for 2 or 3. I hope you enjoy it. Thanks for taking the time to comment.

  5. This was the first recipe I tried in my InstantPot and it has become a family favorite! I have also put onions or mushrooms in the rice and it is awesome.

  7. I cooked pork chops as written. They were a little tough. Do I add time or subteact time to make them tender?

    1. Sorry to hear that Rose! I know when I tried thicker pork chops they were though. I would try again with as thin a pork chop you can find. Or maybe let it do a full natural release. The problem is if you cook longer the rice maybe over cooked. I hope some of these suggestions help. Thanks for trying the recipe and visiting my blog.

  8. Can I use long grain and wild rice mix instead of the white rice ?

    1. According to the rice cooking charts on the Instant Pot site Long grain rice and wild rice have different cooking times. I have not tried it. That being said if the mix was mostly long grain rice or one of those converted rice box mixes I would be tempted to try it. Maybe someone else can comment if they have had experience with cooking that blend. I bet it would be delicious. I might have to try it myself with mushrooms. Thanks for your question.

  9. I used long grain brown rice and it didn't get cooked all the way. Is the cook time different for brown rice???

    1. Oh I am sorry to hear that Bridget! Brown rice does have to cook much longer. I have not tried it in this recipe. But when I cooked it on it's own I cooked it for 15 minute high pressure, turned off the pot and wait 5 minutes before releasing the pressure. I am afraid the pork would be dry if you tried cooking them together. I am sorry it did not work for you the first time. I hope you will try with white rice.   10. I thought this recipe was delish! I added onion and mushroom based on some of the other comments. Used a couple more seasonings on the chops and added 1/2 tsp salt and some dried parsley to the rice since I had low sodium chicken broth. I thought the dish was really tasty, but my rice was a little soggy/mushy - has that ever happened to yours? I might try to decrease the chicken broth just a smidge next time. Overall a great dish, thanks for the recipe!

    1. I am so glad you liked it! Thanks so much for trying it. I found rice is tricky? I have been using Mahatma long grain white rice with great results. I think using a little less liquid could help if it is too soft. I am battling Jasmine rice right now. Have a had a terrible time getting the ratio or timing just right.   11. This turned out great! I actually did use thick pork chops as that was all I had. Since I knew they wouldn't have enough time to cook under pressure, I browned them in a separate pan first and cooked them longer than normal so they were pretty much cooked through before I put them in the Instant Pot. I doubled the rice ingredients and I cooked everything for 5 minutes on high pressure with a 20 minute NPR. The pork chops weren't quite fall apart tender, but I was able to easily cut them with a fork so there were no complaints.

    1. Thanks Nicole! I hope you enjoy it too. I think the box will work just fine. Measure the rice from the box. If it is less than a cup you may want to use a little less water. Please come back and let us know how the box turned out.

  15. So I made this tonight. The rice was so delicious. Unfortunately, the pork chops were so tough they were inedible. They looked about the same thickness ad the ones in your picture. Would it be better to try less or more cooking time if I tried them again? Thanks!

    1. I am sorry to hear that! It will probably take more time. I would try 5 minutes and a NPR(natural pressure release) first. You don't want the rice to over cook.   16. Do you think if I did Brown rice, since it cooks longer, it would be ok with thicker pork chops or even frozen pork chops?

    1. Sorry it took me so long to respond. I am helping a friend recover from surgery and just found your comment. I have not tried it with brown rice yet. But in my mind I think it would work. The only thing I would worry about is them turning out dry. let it natural release a bit. A quick release would pull out more moisture. If you try it please let us know how it turns out.     2. I made this with long grain brown rice and frozen pork chops because I was feeling impatient and I knew brown rice took longer to cook. I browned chops on both sides and cooked for 10 minutes natural release 13 minutes. The chops are a bit dry so I would say 8 minutes would probably be perfect
