I am a Louisiana girl, a licensed interior designer and I share my home with a very cute female pug. I love to cook and share recipes. Most of my family recipes are Cajun and passed down from my Mom and my Maw Maws. I also like to re-create my restaurant favorites. I have a slight obsession with soups and spice blends. Soup is one of my favorite foods and just a great one pot meal. I believe spice blends are a great way to taste the world's cuisines and they are so easy to make at home. Today I decided to share a turkey burger inspired by a restaurant burger I had recently. Twisted Root Burger Co. offers lots of toppings on either their beef or turkey burger. The toppings that caught my eye were roasted chilies and guacamole. They call it the Verde Burger. My twist is I have made it with no added salt. Leslie and I share something other than blogging in common. We both have a family member who is on a low or no sodium diet. Trust me with the bright lime zest in this burger you will not miss the salt. Don't wrinkle your nose! You can add salt if you want, but I promise the addition of lime and its bright, citrus flavor works wonders as a salt substitute.
This burger has all the Verde or green toppings you could be looking for; chilies roasted on the grill and homemade guacamole. It is smokey, spicy, cool and creamy. As a bonus it is good for you too. Roasting chilies on the grill is very easy (I have included a few photos). You could do it ahead of time. In fact you can make the guacamole ahead too, just press some plastic wrap on to the surface to prevent browning. One more piece of good news these burgers re-heat well. I put a burger and some of the chilies in the microwave on high for one minute. Then assemble the burger as usual, still delicious! I hope you will give this burger a try. Verde Turkey Burgers
Makes 4 servings
Ingredients
1 poblano pepper
1 Hatch or Anaheim (California) chili
20 oz. ground turkey (93% lean)
1 Hatch or Anaheim (California) chili
20 oz. ground turkey (93% lean)
Zest of 1 lime
1 Tbsp. cilantro, finely chopped
1 Tbsp. red onion, finely chopped
1 tsp. light mayonnaise
1 tsp. light mayonnaise
Black and red pepper, to taste
Olive oil
4 slices of pepper jack cheese
4 Hamburger Buns
Directions
Pre-heat grill to medium-high heat for 10 minutes.
To grill the chilies: Place chilies on the grill. Grill for five minutes on each side on medium high heat. Remove chilies and cover with plastic wrap. When chilies are cool enough to touch, peel off the skin of the chilies. Cut chilies in half from stem to tip, remove seeds, stem and veins. Chop into small dice.
For burgers: Combine turkey, lime zest, cilantro, onion, mayo and peppers gently. Shape mixture into four patties, making the patties thinner in the middle then the edge. Coat hands in a little olive oil and rub on the outside of each patty.
Grill, covered with grill lid, 6 minutes. Flip burger and grill covered for another 4 minutes. Top each burger with 1 slice of cheese. Continue to cook 2 minutes until cooked through and cheese is melted. Place hamburger buns on the top rack of the grill to toast while cheese is melting. Assemble burgers in this order; bottom bun, chilies, burger, guacamole and top bun.
