I asked Mom where the recipe came from as we prepared them. She said she just made it up. She went on to say that the caterer at their wedding had served something very similar and it was a huge hit. So that is where she got the idea for the recipe. We made half of the recipe for the Super Bowl. The sausage came from Bergeron's. It was their pork and beef smoke sausage. It was very good, lots of pepper flavor. We ate them with toothpicks, but there is plenty of veggie packed sauce if you want to serve it with rolls.
Barbecue Smoke Sausage
Ingredients
5 lbs of good
smoke sausage, sliced
2 onions,
chopped
1 bell pepper,
chopped
6 ribs of
celery, chopped
1 bottle of
hickory barbecue sauce (KC Masterpiece)
1 bunch green onions, sliced (optional)
1 bunch parsley, chopped (optional)
Directions

Directions
Brown sausage
and remove from pot and set aside. Drain almost all the fat from the pot. Saute
vegetables in remaining fat until translucent. Add sausage and barbecue sauce.
Simmer until sauce is desired thickness. Add green onions and parsley if using just before serving.
Serve in a
crockpot to keep it hot. You may serve with toothpicks or with sliced rolls for
mini sandwiches. Perfect buffet item.

DeleteGrowing up, sausage was not my favorite thing. But now I could eat it everyday. This looks so, so good. Company coming for Mardi Gras sounds like the perfect time to make this.
